Every morning the little kitchen behind our counter starts humming. We churn every flavour in four-litre batches — milk from a small dairy up the range, fruit from the Sunday farmers' market, and nothing on the label we can't pronounce. When a tub runs out, it's gone until tomorrow.
The cabinet follows the seasons, not a spreadsheet. When the mangoes are perfect, we make mango; when they're not, we don't. Keep an eye on the specials board — strawberry & basil lasted nine days last spring and people still ask about it.
